Braising - CookingBraising is a cooking method for meat that starts with searing and then incorporates liquid, heat, and time to cook and tenderize it. This cooking technique is typically used for tougher cuts of beef but can also be used to cook poultry, lamb, pork, fish, and sometimes certain types of vegetables. After the meat is seared it is often place in a large covered pot or pan (crock pot) for an extended period that allows the moisture to break down even the toughest cuts. In addition to the final product, the liquid used for braising can be used as a sauce or gravy.
